I highly recommend you look at the Czur brand of scanners, with a comparison page of their different models at https://shop.czur.com/pages/compare.

I have had the Aura model for a couple of years and love it. It is portable enough to take on genealogy field trips, can scan books two pages at a time as fast as I can step on the foot pedal switch (so your hands are free to turn the pages) and can be perched at the edge of a table so it can large objects like newspapers. The software is quite good and OCRs the test you scan. One of my only quibbles is that I wish it had a higher resolution at its top end.

You may consider reaching out to the Family History Library in SLC where they have several installed for patron use. 

I, too own one and believe it would be a valuable option for use in your situation.
